Homemade Focaccia Grilled Cheese with Garlic Herb Compound Butter & Bacon & Green Apple
Homemade Focaccia Grilled Cheese
What you need (to make 8 (large & filling) sandwiches):
1 pan Focaccia - you can find my homemade version here
12 pieces of bacon
garlic herb compound butter (recipe below)
8oz of sharp cheddar cheese block - grated :)
2 green apples - very thinly sliced
What to do:
Prepare your baking sheet & put your focaccia on it
With your homemade focaccia (or store bought no judgement here) - cut into 8 equal pieces - then slice those pieces in half (making two sides of your sandwich)
Spread that YUMMY compound butter on both sides
Put a generous amount of grated sharp cheddar cheese on both sides
turn your oven on to low broil and put baking sheet in
wait until the cheese starts bubbling then turn your oven on hi broil until the cheese starts to crisp (you want to watch this constantly to make sure it doesn’t burn!).
Now assemble the rest of your sandwich - on one focaccia slice place a 1.5 slices of bacon (split into equal pieces), then on top of that add your thinly sliced green apple (to your preference), take your other side of focaccia and smash it down on top! (repeat for all sandwiches)

Garlic Compound Butter:
What you need:
4 tablespoons unsalted butter - room temp or easily mashable
1/2- 1 teaspoon of rosemary (as always based on your preference)
1/2- 1 teaspoon parsley flakes
8 medium sized garlic cloves - minced or grated
salt & pepper (to your preference)
What to do:
Make sure that butter is easily mashable!
Once it is - add your minced garlic, rosemary, parsley flakes & salt/pepper
place into fridge until 30 minutes before you want to use! If you make while grilled cheese is in the oven - perfect no need to stick in the fridge then!
The best way to cook bacon:

What to do:
On a prepared baking sheet (I prefer using parchment paper) lay out the desired amount of bacon
put bacon into a COLD oven and turn on to 400 degrees
set a timer for 10 minutes & then once it goes off - flip your bacon
set a timer for 10-15 minutes & check the bacon if at your desired level of crispiness - take out
