Oven Baked BBQ Tacos
What you need (for 8 tacos):
1.5 cups of Pulled Pork - or could use shredded chicken or brisket - the absolute minimum could always do more!
8 Tortillas
4 oz of sharp cheddar cheese - shredded
2 oz of cojita cheese - shredded
bbq sauce of choice - how much you put on each taco depends on you! I love a good saucy taco so I tend to put more than most!
spray cooking oil - we did coconut oil - avocado oil would be fantastic here
What to do:
Preheat your oven to 400 degrees & prepare a baking sheet with foil
Get out your six tortillas and put on your prepared sheet & spray each side of your tortilla with your cooking oil - you do not want to soak these - just a light mist so they crisp in the oven. Then, put in oven (it’s okay if it’s not all the way preheated yet) set a timer for 10-15 minutes (10 if oven is preheated / 15 if it’s still warming up!)
While the tortillas are in the oven - shred your cheese & mix together to have your own Mexican cheese blend (if you just wanted to buy the blend at the store - that is totally fine too!) Now, make sure your meat is the shreddedness (not a word but I like it) that you prefer
After the 10 minutes are up take tortillas out of the oven & flip them over. Add your cheese & then add your meat on top of the cheese (they look like little bbq pizzas at this point!)
On top of your meat pour your bbq sauce (however much you want) & put back into oven for 5 minutes
After your 5 mins is up take out of oven and flip tortillas in half (to make the normal taco shape) then smash them down with a fork or a spatula. Place tacos back in oven for an additional 3-5 or until crispiness you desire!
