How long it took me: 40 minutes & 33 seconds
What you need:
1/2 cup of butter
2/3 cup of sugar
2 large eggs
1 cup of buttermilk
1/2 teaspoon baking soda
1 cup cornmeal
1 cup flour
1/4 teaspoon salt
What to do:
Start by preheating yoru oven to 375 degrees
Then, melt your butter in a cast iron skillet (or any baking safe deep skillet) on the stove over medium heat.
Once the butter is alllll the way melted, remove from heat & add in the sugar. Stir until extremely well combined.
Very quickly - add in the 2 eggs and whisk whisk whisk whisk make sure you’ve beaten those heavily into the mixture.
Add in the buttermilk & baking soda and stir
Next, add the flour, cornmeal and salt
Once everything is all mixed nicely (you’ll have some bumps & lumps), put your skillet in the oven and bake for 25 -35 minutes (depends on your oven!). Really, once the toothpick comes out clean you’re ready to roll.
