Chicken Lettuce Wrap Pasta
Chicken Lettuce Wrap Ramen

What you need:
1 lb ground chicken (if you want to swap for something I think ground turkey would be great too!
1 yellow onion diced
1 tablespoon garlic (minced)
1 container of mushrooms (diced)
1 can (8oz) of water chesnuts (drained & diced)
1/2 tablespoon of grated fresh ginger
10 tablespoons of low sodium soy sauce ***please see note below
2 tablespoons of sesame oil
4 tablespoons of rice wine vinegar
4 tablespoons of hoison sauce
pepper
2 - 3oz packs of ramen noodles
Head of lettuce
What to do:
Dice up your onion, mushrooms, and water chesnuts & put to the side
Now make the sauce - combine the soy sauce, sesame oil, rice wine vengar & hoison sauce - give it a taste! Would you like some pepper? add it!
Heat up your skillet (over medium high heat) with cooking oil of choice (about a tablespoon of so) then add your mushrooms. Saute these for about 5 minutes (until a little crispy and some moisture has come out of the mushrooms!). Set these aside.
Pour some more oil in the pan (over medium high heat) (1 tbsp) and then add your ground chicken! Cook until you see no more pink & then add your garlic & ginger. Continue to cook for an additional 3 minutes to confirm chicken is done (some pieces may be crispy - yum).
Add the onions & water chesnuts - cook for around 3-5 minutes until onions are tender - then add your mushrooms & give a good stir!
Now add half your sauce & stir until 1/2 or more the liquid has been absored (2-4 minutes)
Add your ramen of choice (I broke mine into smaller pieces so I wouldn’t have to cut them up later for my toddler & this made the noodles cook quicker). Add the remainder of the sauce & cover with a lid. After 3 minutes check your noodles - if they easily break apart it’s ready! You want to make sure you don’t over cook these as they become gummy quickly.
Now, give it a goooood stir and make sure everything is well combined. Then dig in!! I still put these into the lettuce cups and they were amazing! I gave Emmie the noodles and cut up some lettuce and combined it & she ate 3 helpings :)
Notes:
***this is a saalllttty dish - so if you a very sodium adverse replace 2-3 tablespoons of the low sodium soy sauce with low sodium chicken broth - i wouldn’t do more than that because you don’t want to dilute the flavor too much!
