Chocolate Chip Cookie Pie
Start to eat time: 1 Hour & 9 minutes
What you need:
1 deep dish pie shell (you can make it homemade if you want to - I bought a pillsbury!)
2 eggs
1 teaspoon vanilla
1/2 cup all purpose flour
1/2 cup brown sugar (I used light)
1/2 cup sugar
3/4 a cup of non-salted butter - softened (I microwaved the butter for 30 seconds)
3/4 - 1 & 1/2 cup of semi sweet chocolate chips (depending on how much chocolate you want)
What to do:
Preheat your oven to 325 & get all your ingredients out and ready to use!
In a stand mixer (or a bowl with a hand mixer) beat your eggs until they are a bit foamy (took me about a minute on medium high speed) - then add your vanilla
Next up, add white & brown sugar & flour - mix until well combined
Then add your butter & mix aggressively (high speed for about a minute)- it should start to look suppppper fluffy and that’s when you know it’s ready!
Fold in your chocolate chips -not aggressively
Pour your fluffy chocolate chip mixture into your pie crust and then put on a baking sheet & slide it into the oven
Set your timer for 50 minutes - start checking your pie around then - the toothpick should come out clean. *Every time I’ve made this pie it has been finished at the 60 minute mark
Once your toothpick is clean remove the pie from the oven! If you dig in immediately (like I did first) it will be oooooeeey gooey and very runny but also delicious (think molten cookie dough) - if you want a more set pie wait at least 15 minutes - if you want an extremely set pie wait around 30
Service with vanilla ice cream & enjoy :)
note - when reheating your pie in the microwave (if you have leftovers) heat for 17 seconds :)
