Roasted Balsamic Honey Brussels
Start to eat time: 39 minutes
What you need:
about 1 lb of brussels ( I get the prepackaged baggie from the grocery store - its always a little bit over!)
2 tablespoons olive oil
7-10 cloves of minced garlic or 1.5 to 2 tablespoons of minced garlic
1/2 teaspoon white pepper
1/4 teaspoon salt
1 tablespoon of balsamic vinegar
5-7 seconds worth squeeze of honey (I did a seven second squeeze but I tend to like things on the sweeter size!)
What to do:
Preheat your oven to 400 degrees & stick your cast iron pan in to preheat
clean, cut & peel your brussels - I cut them in half & then peel a layer or two (anything that looks weird or wilted) away
Once your pan is nice & hot - place it on the stove over medium high heat & add your olive oil.
Then add your minced garlic, salt & pepper - give it a nice stir - don’t panic your garlic is going to start to brown & sizzle
Then place your brussel sprouts open side down & do not touch them for 3 minutes! After 3 minutes check to see if they are browning. If they are browning place into the oven - if they haven’t started browning give another minute to two.
Once they have been in the oven for 5-7 minutes, give the cast iron pan a little shake (if some are stuck grab a wooden spoon and gently move around). Put the brussels back in oven and repeat that process 2 more times (the brussels will be in the oven for around 20 minutes)
They should be a nice brown color & soft. Take them out of the oven and immediately pour your balsamic vinegar & honey over them. You want to do your honey ASAP so it caramalizes in the pan nicely!
Give the brussels a good stir with a wooden spoon - the vinegar should loosen up all of those roasted garlic bits
Then dig on it! I recommend serving with pomegranates or a whipped honey goat cheese spread.
