Chocolate Chip Pumpkin Energy Balls

What you need:
1/2 cup maple syrup
1/2 cup pumpkin puree
1/4 cup of peanut butter (or nut butter!)
1 & 1/2 cup of oats
1/4 cup of chia seeds
1/2 cup of mini chocolate chips (or measure with your heart!)
What to do:
Mix together maple syrup, puree and peanut butter & stir until well combined
add your oats, chia seeds & chocolate chips - stir until well combined. If you feel like the dough is too runny (depends on your PB or nut butter) add some more oats!
Now, time to get your hands messy & roll into balls. The size of the ball is up to you - we did a large tablespoon (1.5 ish) per ball & I would recommend. This made ~24 energy balls.
Once you’re finished shaping the balls 0 place in the freezer for a minimum of 15 minutes - at the 15 min mark they are stable to eat but the longer you can wait the more together the balls will stay. Once they are at a consistency that you prefer, place in a ziplock bag and store in the fridge for a quick snack!
